Hunan Province is located in south-central China, bordered by the Yangtze River to the north and Guangdong to the south. It is a region of rich geographical diversity, boasting abundant water resources and mountain ranges. This varied terrain provides favorable conditions for a diverse range of agricultural products and ingredients. The numerous lakes and river systems in Hunan not only facilitate irrigation for agriculture but also underpin its rich fisheries.

The people of Hunan are known for their straightforward and enthusiastic demeanor, traits that are also reflected in their culinary culture. Hunan cuisine is famed for its spicy flavors, which are intense yet not overpowering, aromatic without being greasy.

Hunan cuisine, also known as Xiang cuisine, is one of the eight great traditions of Chinese cuisine and is noted for its distinct and diverse flavors, with each dish having its own unique style. It extensively uses chili peppers, garlic, and soy sauce and excels in smoking and pickling techniques to enhance the flavors of the food. Signature dishes of Hunan include Dong'an Chicken (东安鸡) - a classic Hunan dish, featuring chicken cooked in a mixture of rice vinegar, chili peppers, and spices, creating a light but spicy broth that accentuates the natural flavor of the chicken. Sour String Beans with Minced Pork (酸豆角炒肉末) - pickled string beans are stir-fried with minced pork and chili, a typical rural Hunan dish that showcases the local love for pickled vegetables and pork. These dishes not only showcase the love for spice among Hunanese but also reflect the uniqueness and innovation of Hunanese culinary practices in using local ingredients and seasonings.
